I live in London. I am emigrating to Chicago next May to get married.
I need a honeymoon destination for Late July 2008. The must haves include:
A great beach
Boutique/luxury hotel
Some culture, expeditions etc nearby
Would consider Europe
Would consider an all-inclusive resortAny ideas???

Here are a few honeymoon ideas that fit your requirements and are also less mainstream than Hawaii or The Bahamas.
Bali:
Go rafting, diving, explore the artistic community of the Indonesian island of Bali. The culture here is truly the people. Luxury accommodation options include: The Four Seasons, Ritz Carlton, The Oberoi, and Grand Hyatt.
Belize:
Explore Mayan ruins, hike through the rain forest, take a dip in the Caribbean. The official language is English. Luxury accommodations include: Inter-Continental Hotels, Fairmont Hotels & Resorts, Crowne Plaza Hotels & Resorts, Conrad Hotels, Morgans Hotel Group, DoubleTree Hotels & Resorts, Fiesta Americana Hotels
Madagascar:
Definitely off the beaten path, Madagascar is situated on the southeastern coast of Africa, in the Indian Ocean. Anjajavy L’Hotel is one among a few luxury hotels on the islands. Sailing, golfing, remote river tours, and safari are just a few things to do while you’re there. Madagascar is particularly famous for its wildlife, with a large population of species found only on the island. Perfect for adventurers and animal lovers alike.
Cheers!

The town is called Buzios, its 2 hours north of Rio, Brazil.
The hotels are boutique, but small and cosy.
The town is a peninsula with some 20 beaches, safe, lots of great dinning options.
both hotels can provide transport from Rio, so no worrying about driving, violence etc.

I would say your best bets are the Caribbean Islands and Hawaii (the state, not just the island named Hawaii). Jamaica is very big on all-inclusive resorts for couples, and there is a lot to see on the island. Hawaii doesn’t much go for all-inclusive resorts, but it is really big on luxury hotels. I personally love the Hyatt Regency on Kauai, which has a swimming "river" connecting multiple pools. Kauai mainly has nature as an asset, so if you want more cultural sites, Oahu or Hawaii (the "Big Island") might be better Hawaiian islands for you.
If you would like to see ancient Mesoamerican ruins, Cancun is another place to consider.
Of course, there are lots of great places in Europe, but why go so far?
