The issue is not WHERE to go, but rather you have to know what your jewelry is worth.

First, find out what metal it is: 14 K gold, 18K gold, sterling silver (.925), etc. This should be inscribed on the inside of the rings. Then find out what the rings weigh. Then use the price of gold or silver. This varies daily and can be looked up on the web: today’s gold price was $826/oz
    http://goldprice.org/live-gold-price.html

Say your rings together weigh 0.5 Oz and are both 14 K gold (24 K is pure gold), then they are worth: 826/2 x 14/24 = $240.92. This would be the value of the gold, without counting the value of any stones (diamonds) that might be on the rings. To get the value of the stones/diamonds you will have to consult with a diamond dealer or gemologist that you can trust.

So, once you know roughly what your jewelry is worth you can find out by yourself whether you are getting a good deal or not.

    Good luck.

Replace the missing stone with a cubic zirconia. A local jeweler shouldn’t charge that much. List it on EBay with no representations. Hopefully you’ll get back what you paid.

i say go to craigslist.org, and choose your nearest city, and then post it on there. then you choose what price you set it as and you can probably get more than at a pawn shop.
